Knowing exactly how much water it takes to make your favorite food means you can make small changes at your table that actually have major impacts on our food system at large. With prolonged and extreme droughts cropping up more and more often, that’s kind of a big deal. Grist’s science editor Amelia Urry appeared on MSNBC’s Greenhouse this week to talk with host Tony Dokoupil about how our food choices impact water usage more than what comes out of our faucets. But no need to steak-shame anyone here: It’s all about context, and skipping that sirloin or chocolate cake isn’t going to put water back into depleted aquifers.
